Campfire cake

This basic campfire cake recipe takes little effort and can be made in one pot over coals.

Ingredients

3 eggs

1 cup sugar

1 cup plain yoghourt

Dash of vanilla

1.5 cup cake flour

1 tsp baking powder

Dash of salt

Add-ons of choice

½ cup coconut or vegetable oil



Equipment

Bowl

Fork

Spatula

Pan

Potjie pot



Method

Mix eggs, sugar, yogurt and vanilla.

Mix flour, baking powder and salt.

Add dry ingredients to wet ingredients.

Fold in your add-ons.

Mix in oil.

Pour into the cake pan, and set the pan into the potjie to avoid it touching the bottom of the pot.

Bake in the oven or over and under coals for 50 minutes rotating once.

Poke with a knife to see if it comes out clean.

Let rest for 20 minutes.

Voila- CAKE!
